She explains that the recipes are collected from manuscript books of her family and friends ("several given by epicures well known in former days') and include one or two from "Queen Anne's royal cookery book', a few from "Mrs Hale's recipes' published in Philadelphia, and some entitled "Eastern cookery' given by a lady. These last-mentioned recipes appear under the title "Eastern cookery translated from the words of Karabet Akhtgi' and begin on page 147. There are recipes for "Boorgoo', "Kebab', "Tenge2re2 kebab', "Dolma', "Dolma of vine leaves', "Tomato patties', "Keinfte2' and "Keihma'.
