      In the preface, which is dated February 1885, Simmonds explains that one of his previous works, "The curiosities of food; or the dainties and delicacies of different nations obtained from the animal kingdom" which was published in 1859, "dealt cursorily with the wide subject". In this new book he has "endeavored to condense... a large amount of practical and useful information". Indeed, he has collected interesting and unusual material on eating habits from all corners of the globe. He includes descriptions of how various foods are cooked and eaten, and comments on their quality as food, for example, one may make "good eating" while another "tastes fishy".
