      The introduction is signed "H. B. T. 6th February, 1897." Although the first edition caters in part for vegetarian tastes, in the intervening years the author seems to have become a convinced vegetarian. Recipes in the first edition which use fish, flesh or fowl are omitted here and the author explains in the rewritten introduction, "My object in preparing this book is to induce my readers to give vegetarian cookery a trial and so discover how advantageous to health [such a] diet is."
      LoEN and OB hold second copies, both acquired in 1903 and both bound in paper.
