For a discussion of this attribution, see Hamer. @LoEN holds an edition of "Cassell's dictionary of cookery" which it dates [1878] where the last page of the introduction is signed "A. G. Payne." The introduction is called "The principles of cookery".

      This is a retitled edition of "Cassell's shilling cookery". Preface, text and pagination are the same. Later editions of the book reverted to the original title, "Cassell's shilling cookery", with the exception of one undated, twentieth-century edition called "Cassell's popular cookery" (see below).
      I cannot be sure where this edition fits chronologically in relation to the fortieth and sixtieth thousand of "Cassell's shilling cookery" both of which are also dated 1889. Interestingly, this edition carries an advertisement for the fortieth thousand.

      An advertisement on page iv which refers to King George V who reigned 1910-1935 indicates that this edition was published in 1910 or later.% General comments: There is an advertisement for the eightieth thousand of "Cassell's shilling cookery" in Lizzie Heritage's "Cookery for schools" of 1891; an advertisement for the one hundred and tenth thousand in Heritage's "Cassell's new universal cookery book" of 1894; and an advertisement for the one hundred and thirty-fifth thousand in Phyllis Browne's "The dictionary of dainty breakfasts" of 1898. These advertised editions may or may not correspond to some of the dated editions cited above which I have not seen.% American editions: NIC(HA) holds "Cassell's half-dollar cook book" edited by A.       BMCat entry for call number 07945.m.12 describes an edition of "Cassell's vegetarian cookery" dated 1891. The volume with that call number is, in fact, the 1905 edition. It is bound in blue cloth.

This edition appears to have been issued about 1918: printer's marks on the inside front face of the binding and on page 190 read, "Vegetarian cookery 3/18" and "30/318", respectively.% General comments: NIC holds an undated, 190-page edition with a title-page that matches the title-pages of the two undated editions at OPo(F) described immediately above. The library dates its copy [1906] but has no record of the source for the dating. The NIC edition was probably published after the last dated edition of 1913.

      The preface states, "The present work has no pretensions to be a complete book on cooking, but is simply a series of papers (which originally appeared in "Cassell's magazine")... The attempt has been made to so mingle recipes with anecdote, that the perusal of the book may be a means of entertainment as well as of useful information. The work is intended more for the drawing-room than for the kitchen."
      LB, LoEN and OB date the book [1877]. The date is confirmed by a printer's mark on page i of the advertisements which reads, "3 G-777".

      Page vi of the introduction says, "In the following pages will be found a description of almost every article supplied by Messrs Crosse and Blackwell". The entries are arranged alphabetically from absinthe to yellow vegetable colouring. The book discusses both how to preserve foods at home and how to use commercial, preserved foods in cooking.
      LoEN and OB date this edition [1886]. I have not established whether it precedes, follows or is contemporaneous with the edition described immediately below.
