PEEL, Mrs Dorothy Constance   1872-1934


NNNAM cites this author as Mrs Dorothy Constance Peel nee Bayliff and gives her date of death. A prolific author of books on cooking and housekeeping, she was writing steadily from the turn of the century up to the early thirties. Her social histories include "The stream of time: social and domestic life in England 1805-1861" first published in 1931, "A hundred wonderful years: social and domestic life of a century 1820-1920" first published in 1926, and "How we lived then 1914-1918: a sketch of social and domestic life in England during the war" first published in 1929. Her life story, "Life's enchanted cup: an autobiography (1872-1933)" was first published in 1933, with a second edition following in the same year.

      This is No. 4 in "The simplified series of cook-books".       Mrs Peel says in the preface, "In the year 1898 I wrote a series of articles for "Hearth and home" on the subject of catering at 10s a week, which called forth a considerable correspondence.... I have repeatedly been asked for a menu and recipe book especially compiled for the mistress who must keep her bills to the 10s a head limit, and who must employ a single-handed plain cook of average ability. Hence the appearance of this volume...."
      The book makes use of articles and recipes contributed by Mrs Peel to "Hearth and home" over the previous four or five years. There are 458 numbered recipes in all. They are preceded by a week's menus for breakfast, dinner and supper for each of the four seasons. Dining-room menus and kitchen menus are given.

      There are now 520 numbered recipes. Mrs Peel admits in the first chapter that "it is no longer possible to provide the menus set forth in Chapter II for 10s a head:... they would now cost 12s 6d to 15s 6d a week per head." However, she suggests a range of economies that would allow a family to "live nourishingly and not unattractively" on the old budget of 10s per head per week.
