MARSHALL, Mrs Agnes Bertha   died 29 July 1905


Mrs Marshall's books were only one facet of her successful cookery business which was based at her School of Cookery at 30 Mortimer Street, London. The school, which she took over in 1883, survived into the 1950s. Her lessons were aimed at the cooks and ladies of upper-class families. Mrs Marshall sold kitchen utensils and cooking ingredients, and operated an employment agency for cooks. She also published a weekly penny paper called "The table'. She died at the age of fifty at her home, The Towers, in Pinner, Middlesex. @I am grateful to Barbara Ketcham Wheaton, who edited the 1976 facsimile edition of "The book of ices', for providing the biographical information upon which this entry is based.

      There are 117 numbered recipes. The attractive colour plates show a variety of moulded ices. Pages 45-64 are advertisements for Mrs Marshall's products and illustrate many of her moulds. LoEN and OB date this first edition [1885].

      This is a facsimile of the 1885 edition. The introduction by Barbara Ketcham Wheaton contains the fullest description and evaluation of Mrs Marshall's career and writings to be found. Wheaton analyses Mrs Marshall's ice-cream recipes in the context of the nineteenth-century tradition and points out both the borrowings and differences from William Jeanes's "Gunter's modern confectioner' of 1867. She also interprets the recipes and techniques for the modern cook and American equivalent measures are printed in the margin next to the recipes.
      I have taken the title and imprint from a photocopy of the title-page.% General comments: Bitting 310 and Axford 38 cite an undated and unnumbered edition of 64 pages.

      In the introduction, which is dated May 1894, Mrs Marshall says that "the object of this volume is to treat the subject of "ices" beyond the simple descriptions given in [her] "Book of ices"'. The title-page and binding are appropriately designed: frosted letters form the title, and a polar bear carrying a tray of ice-creams and standing on an ice flow is printed in silver and black on the binding.

Although the introduction is undated, an advertisement on the verso of the half-title for the sixtieth thousand of Mrs Marshall's "Cookery book', the ninth thousand of her "Larger cookery book' and the sixteenth thousand of her "Book of ices' gives some indication of the date of publication: the preface of the ninth thousand of the "Larger cookery book' is dated February 1902 and OB dates the fifty-fifth thousand of the "Cookery book' [1905].% 5040

      This enlarged edition has been repaginated to accommodate the new recipes with the result that the page references in the author's "Larger cookery book" to recipes here no longer correspond. There is a special notice on page vii explaining the discrepancy.
      Three factors point to a publication date of about 1894-1895 for this edition: an advertisement on page iv cites "Fancy ices" as "just published' and this title was first issued in 1894; there is a handwritten inscription dated 1895 on the blank leaf preceding the half-title of the WYoLU(B) copy; and a footnote to the preface of the sixth thousand of the author's "Larger cookery book' states that the thirtieth thousand of "Mrs A. B. Marshall's cookery book' has been "corrected to date of this edition, December 1894.'% 5048 6

      The copy in the Bitting Collection (Bitting 310) lacks the frontispiece and the advertisements following page 656.
      SCat Westbury 327 describes a dedication copy(') bound in red morocco with gilt-panelled sides and silk end leaves. The name of H.R.H. Princess Christian and her royal arms are on the binding.
