      The text provides a history of the use of each drink and a general description of its preparation. Some recipes are included. The introduction explains that the book "has been written, it is hoped, without bias or prejudice of any kind; but, as the drinks containing alcohol are many more than those in which it is absent, more have been mentioned.' Pages 235-344 deal exclusively with non-alcoholic drinks and contain chapters covering tea, cuca (coca), kola, coffee, cocoa, aerated drinks and milk. The last chapter, entitled "Additional drinks', discusses more unusual non-alcoholic drinks such as koumiss and blood.
