In neither the American edition nor later British editions of "365 desserts" is the compiler named. The book was registered for copyright in the United States in 1900 but DLC informs me that in 1916 there was some question about the author's identity. This was cleared up, to the satisfaction of DLC and the US Copyright Office, via correspondence in July of that year with the author, Harriet Schuyler Nelson.
