FILIPPINI, Alessandro   


This author is usually known as Alessandro Filippini; however, on the title-pages of the British editions of "One hundred ways of cooking eggs" and "One hundred ways of cooking fish' his last name is spelled "Fillipini". His first name is also sometimes given in the English form, Alexander. In the introduction to "The international cook book' he refers to Switzerland as his native country.

      In the introduction Filippini explains that he took a leave of absence from the International Navigation Company to research the book. He adds, "... a tour of the world was made, and personal visits paid to hotels, restaurants and homes of all countries. Indeed, I have been continually gathering new material and travelling for the past decade." He goes on to describe some of his gastronomic experiences abroad. The text contains menus for breakfast, luncheon and dinner for each day in the year. Recipes follow each menu and there is also a supplementary section, making a total of 3,325 numbered recipes.

      Printed on the verso of the title-page is "Copyrighted, 1889, by Charles L. Webster & Co.' Charles L. Webster and Co also appears as publisher on the spine.
      A facsimile letter on page vi from the author to Mr Charles C. Delmonico, dated 14 February 1889 and asking his permission to dedicate the book to him, faces a facsimile letter in reply from Mr Delmonico dated 4 March 1889.
      The book begins with sections called "The pleasures of the table', "Our markets', "Varieties of fish', "Vegetables', "Water-melons and musk-melons", "How to set a table' and "How to serve meals'. Pages 25-150 comprise menus for every day in the year. Each dish in the menus is keyed to one of the 1,394 numbered recipes which follow. The text ends with a chapter of celebrated menus.

      Printed above the title on the title-page is "Queen: # "Sure to find its way to any kitchen ruled by a cook worthy of the name.^"' Pages 433-505 are a "Second supplement to "The table^"' which includes recipes 1,395 to 1,550 and a separate index. When examining the bookseller's copy it is likely that I missed counting an illustration of how to set a table on page 19.

      There is no title-page quotation as in the preceding 505-page edition.% General comments: I have not determined the order of publication of the first four cited editions; however, all must have appeared within a year since the revised edition of 505 pages was published in 1890 according to BMCat.% American editions: These are all entitled "The table'.
