In the preface the author emphasises that the book was not written for the trade but for "those who desire a knowledge of the work either as an art, a hobby, or (in the case of cooks) for their own betterment'.% @OB dates its copy [1904]; however, the year of publication does appear on the title-page. The OB copy is bound in blue cloth.
