DODS, Miss Matilda Lees   


DLC holds "The culinary art; or, science in the kitchen, as taught by Matilda Lees Dods', Philadelphia: Enterprise Publishing Co, 1897, a 64-page booklet published as a souvenir of the author's Philadelphia lectures. The preface of this book briefly describes the writer's career up to 1879. Miss Dods took a First-Class Diploma from the South Kensington School of Cookery after a three-month course. She was, apparently, the school's second graduate to embark on teaching cookery, giving her "introductory course of lectures' in London during 1876. She then toured through the large manufacturing towns of Scotland and the north of England for nearly two years attracting audiences of up to a thousand people. She travelled to the United States six months before the preface of the book was written (probably in December 1878 since the preface is dated May 1879) where she lectured in New York and Philadelphia. @Other titles by Miss Dods include "The art of cookery`, second edition enlarged, [no publisher: 1879], pages 27, cover-title: "The art cuisine`, published in the United States at the cost of 25 cents, copy at KMK; "The ideal home' (LB lists London: G.
