VINE, Frederick T.   died 25 September 19


Vine wrote for the baking trade; however, the books catalogued below have been included in the bibliography because they contain a substantial number of recipes which could be adapted for home use or which may be of interest to individual cooks. Vine's "Practical bread-making" (first edition, 1897, in LoEN and LCF; a second edition, 1900, cited in CBCat 37; and another edition, 1905, cited in JLCat (B)), which is a collection of recipes producing commercial amounts of baked goods and quite unsuitable for small-scale use, is not described here. Nor are two pamphlets catalogued: the 11-page "Christmas puddings and how to cook them for shop sale" which LoEN dates [1906]; and the 20-page "Hot plate goods" co-authored with R. Gommez which is about the home production of hot-plate goods as a cottage industry. (NUCat lists NN as holding an unnumbered edition of "Hot plate goods" co-authored by Compton Dene [Frederick T. Vine] and R. Gommez. LoEN has the second edition, [1898], and BMCat records as destroyed the third edition, [1899]. Gommez is cited as sole author in the second and third editions.) @Vine's date of death is found on page 488 of "Food and cookery", Vol. XIV, No. 152.

      There are fifty numbered recipes including one for "Celery ice-cream". About this concoction Vine comments, "...if you taste it once, you will like it,...." However, he does caution the reader "against using too much celery essence, as it is sometimes pretty peppery, and if too much is used, it stings the tongue,...."
