In the lecture on pages 1-21 Mrs Lewis argues for moderation in the consumption of meat and alcohol. One of her aims is to encourage the working classes to get the best food value by steaming rather than boiling their vegetables; in this respect she was a woman well ahead of her time! Recipes are on pages 22-31. LB, LoEN and OB date the third edition .
