In the preface, which is signed "T. M. MacKnight. Geneto, Laguno, Teneriffe, December, 1903.', the author explains how he realised the need for the book when working as a tropical produce merchant in Queensland, Australia. Entries for various exotic and strange foods are arranged under the headings "Bread', "Potato', "Meat', "Butter', "Vegetables', "Sugar', "Fruit', "Beverages' and "Condiments'. Each entry gives the variation in name and cooking method in different countries, and comments on the food's flavour.
