Aunt Kate explains in the preface, "As far as possible I have sought to keep the beverages on temperance principles, and have only allowed a modicum of alcohol for the purpose of preservation. I was compelled, however, to make an exception in the American drinks section, which was introduced chiefly for the sake of variety."
