On pages 7-32 the author relates her experience in starting a class in artisan cookery for the poor in "the very large" but unnamed town in which she lived. In preparation she took a course at the National Training School for Cookery since, as she admits, she knew nothing about cookery! Menus and recipes follow on pages 33-46.
