    The author dedicates her book on page v "to all men and all women interested in fruits: as scientists # whether in the laboratory, the kitchen, or the garden; as artists...; and to those who claim special training in neither science nor art but simply and thoroughly enjoy good, wholesome cookery." The book has twenty-five chapters, each devoted to a different fruit or fruits, many of them unusual, particularly for the time. The fruits include, for example, papaws, persimmons, bergamots, citrons, guavas, kumquats, pomegranates, avocadoes and custard apples. The chapters begin with introductory text about the fruit, followed by recipes.
