    LB lists this edition as published in London by Petter and Galpin, [1875-76], pages iv, 1,178. NUCat also records an edition [1875-76] held by MB and with the introduction signed "A. G. Payne'.
    This edition of [1875-76] is the earliest that I have discovered. EngCat is no help in determining the date of the first edition; its earliest listed edition was published in 1877.

    The title-page of this edition is in a two-line border and the exact imprint reads, "Cassell Petter & Galpin: London, Paris & New York.' The introduction, which is entitled "Cassell's dictionary. The principles of cookery.' and comprises pages i-xcvi, is signed on page xcvi "A. G. Payne.' Another feature of this edition is that the ninth page of "Principles" is not numbered.
    LB describes this edition as "a reissue' and dates it [1878-80]. LoEN and OB each hold a copy which they date [1878] and [1877], respectively. These appear to be identical to the LB copy except for a few details which may be due in part to the fact that all three copies are rebound. For example, all have the same unnumbered frontispiece showing good and bad meat; however, of the remaining plates in the LB copy, eight are grouped together preceding the first page of "Principles' and one is opposite page 505, while the remaining plates in the LoEN and OB copies are scattered throughout the volume. The LoEN copy also differs from the OB one

    The title-page is exactly the same as LB 7942.m.7 except for the imprint which reads, "Cassell, Petter, Galpin & Co.: London, Paris & New York.' (note the punctuation and the inclusion of "& Co."). The introduction is now entitled "The principles of cooking and table management. The why and the wherefore of boiling, grilling, and frying.' and it is no longer signed on the last page. The ninth page of "Principles' is numbered. LB dates this edition [1891'], probably following the handwritten inscription on the end-paper dated 29 October 1891; however, this must surely precede all those with Cassell and Co Ltd as publisher.
    LoEN and OB (268.a.102) each hold a copy which is as described for LB 7947.c.81 except that the title of "Principles' remains as LB 7942.m.7. Also, in both copies the contents follows the preface so that the pagination runs [i-iii] iv [v-vi],.... They date their editions [1880].% 1002

    The title-page is no longer in a two-line border. The imprint and heading of "Principles' read exactly as described for LB 7947.c.81.
    The OB copy appears to be a version issued in thirteen parts since the original blue paper binding of Part 1, price 6d, is bound in before the frontispiece.

    The differences between this edition dated [1885] by LoEN and the [1882] edition held by LoEN are small. The contents precedes the preface which accounts for the different initial pagination. Here the frontispiece is not numbered. Also, the small printer's mark at the bottom of the first page of "Principles' has changed from "a' to "a-N. E.'.
    The OB copy is the version issued in thirteen parts as indicated by the original yellow paper binding of Part 1, price 6d, which is bound in before the title-page. OB dates its copy [1884].% 1004

    The publisher is now simply Cassell and Co Ltd. Unlike the editions which follow, there is no indication of the print run on the title-page.
    LB dates this edition [1880-81]. NN holds a copy which appears to be the same as the LB one except that the frontispiece illustrates four numbered dishes instead of good and bad meat. NN dates its copy [1884], the year it was acquired by the Astor Library.% 1005

    In this retitled edition the preface, which is dated March 1904, has been partially rewritten. The "Principles' have also been slightly revised. The main text remains essentially the same although some recipes have been dropped and some added. All the plates are new except for one showing good and bad meat.
    A private collector reports this edition issued in twenty fortnightly parts costing 6d each.% 1013

    The title and imprint are from a photocopy of the title-page sent by a private collector. I have been unable to date this edition exactly; however, it must have been issued after the 1909 edition whose title follows a different pattern, and around the time of the 1912 edition which bears the same title except the number of colour plates is specified.
    NUCat records an undated edition having 1,165 pages and twelve colour plates including a frontispiece and illustrations. Copies are held by DLC, PPULC, MdBP, PPT and OOxM.% General comments: NUCat cites "Cassell's dictionary of cookery. With numerous illustrations. Containing about nine thousand recipes.", London, New York [etc]: Cassell and Co, [1896], pages 1,178, and lists ICJ, MH, NIC, PPULC, LU, NN, PPD, PP and DP as locations for the edition. The LU copy is the one hundred and thirty-fifth thousand, dated 1896, and catalogued above. The NIC and DP copies are undated and unnumbered, and were published in London, Paris and New York by Cassell, Petter, Galpin
