    The following quotation is on the title-page: ""The number of inhabitants who may be supported in any country, upon its internal produce, depends about as much upon the state of the art of cookery, as upon that of agriculture, but if cookery be of so much importance, it certainly deserves to be studied with the greatest care. Cookery and agriculture are arts of civilized nations: savages understand neither of them." # Count Rumford's Works, Vol. I."
    In the preface, which is dated July 1877, Miss Cole comments that "the work has been used and tested in the National Training School for Cookery since 1875, and the instructors now employed in local schools throughout the country have been taught and practised by means of these lessons'. She adds that the lessons were also available printed on separate sheets of paper.

    There appear to have been two editions issued by Chapman and Hall in 1878 since NUCat lists an edition dated 1878 with a title slightly different from that in the British private collection described above. It reads, "Comp. by R. O. C. from the course of practice... 2d ed.', following the pattern of later editions.% 1097

    I have taken the title and imprint from a photocopy of the title-page supplied by RPB. The word "ordinary" now precedes "course of instruction" on the title-page, and below the quotation from Count Rumford is the sentence "Buckle, in his "History of civilization," names food as one of the four physical agents which exercise a most powerful influence on civilization." NUCat describes this edition as the fifth.

    General comments: NUCat cites an edition dated 1887 at PPL; however, PPL reports that NUCat is incorrect. Its copy is dated 1878 and corresponds to the 1878 edition in the British private collection described above.% American editions: This work was published in New York by D. Appleton and Co in 1878 under the title "Lessons in cookery. Hand-book of the National Training School for Cookery (South Kensington, London). To which is added the principles of diet in health and disease. By Thomas K. Chambers, M.D. Edited by Eliza A. Youmans.' Bitting 585 refers to an American edition of 1879; however, this may be a typographical error for I have not traced a copy of that date.% 1114
