The author discusses in the preamble the many varieties of flavour and ways to cook mushrooms. Although he remarks, "It is no part of our present design to give special instructions in the art of cooking', in each of the twenty-six individual entries for edible mushrooms which follow the preamble he makes some critical comment about taste and the best methods of cooking.
