The author explains in the preface that the recipes are "arranged in compliance with the wish of a clergyman who is at the head of a large school, and to schools and large families [he] particularly [offers] them". The text begins with twelve pages on soups. Then follow 112 dinner menus for the four quarters of the year with their recipes, and twenty maigre-dinner menus with their recipes. The remainder of the book is given to sick nursing and invalid cookery.
