This is a facsimile of the 1885 edition. The introduction by Barbara Ketcham Wheaton contains the fullest description and evaluation of Mrs Marshall's career and writings to be found. Wheaton analyses Mrs Marshall's ice-cream recipes in the context of the nineteenth-century tradition and points out both the borrowings and differences from William Jeanes's "Gunter's modern confectioner' of 1867. She also interprets the recipes and techniques for the modern cook and American equivalent measures are printed in the margin next to the recipes.% @I have taken the title and imprint from a photocopy of the title-page.% General comments: Bitting 310 and Axford 38 cite an undated and unnumbered edition of 64 pages.% @NUCat records a revised and enlarged edition of 80 pages at DNAL.% 5036
