  This is a facsimile of the 1885 edition. The introduction by Barbara Ketcham Wheaton contains the fullest description and evaluation of Mrs Marshall's career and writings to be found. Wheaton analyses Mrs Marshall's ice-cream recipes in the context of the nineteenth-century tradition and points out both the borrowings and differences from William Jeanes's "Gunter's modern confectioner' of 1867.
