    In the introduction the author discusses oyster-rearing and oyster-eating in Britain. The following text is in two sections: pages 1-50 comprise oyster recipes; pages 51-66, shellfish recipes. The shellfish section includes recipes for clams, crayfish, lobsters, collops, cockles, crab, mussels, periwinkles, prawns, scallops and shrimps.
