The following quotation is printed on the title-page: ""Now good digestion wait on appetite and health on both." (Macbeth, III., 4.)"% @In the preface the author describes her aim as "to put together simple and inexpensive dishes, suitable, for instance, to those living in the remote rural districts of Ireland, and to those of moderate means living in the larger towns." She adds, "While not meaning to confine the book to one country, I yet have the welfare of the "Irish people" especially at heart".
