The new preface now emphasises that the volume has also been compiled "as a class book for the use of schools". It refers to the author as "Mrs" I. L. Richmond. The text of the second edition is in two parts and contains twenty numbered lessons: Part I, "Ten lessons in cottage cookery", and Part II, "Alternative dishes for a second set of ten lessons".
